Novillo, translated from Spanish means 'young bull'. An exuberant, fruit – driven style showcasing the inherent strength and grace of Tempranillo. Produced from 100% Barossa Valley fruit from a number of young Tempranillo blocks including the Semmler vineyard in Lyndoch and the Mattschoss vineyard in Greenock as well as a small parcel of Grenache from Gomersal. Both Tempranillo sites have deep, brown and red loam soils, respectively and produce fruit with vibrant red berry characters and fleshy, savoury tannins.

Fruit was machine picked in the third week of March, crushed and de-stemmed into a small stainless - steel fermenter. The must was cold soaked at 12 – 15°C with daily juice pump-overs for three days until fermentation commenced. The ferment was then allowed to warm up to a maximum of 30°C with juice pump–over three times daily to extract flavour, colour and tannins. After 8 days on skins, the wine was pressed, settled and racked to seasoned 500 and 300 litre French oak barrels where it completed malolactic fermentation. The wine was racked off lees, sulfured and returned to barrel for 20 months prior to final blending and bottling.
